Peanut Butter Energy Bites

Although a tad dry, they are still yummy! Another 15 minute snack that can be prepped in advance and kept in the fridge for up to a week. These perfectly portioned energy bites are full of protein and carbs and are a great snack before or after a workout or to hold you over until dinner!


Ingredients:

1 cup old fashioned oats,

1/4 cup flax meal,

1 tsp. espresso powder,

2 tbsp unsweetened cocoa powder,

2 tbsp unsweetened shredded coconut,

Pinch of salt,

1/2 tsp vanilla extract,

5 tbsp creamy peanut butter,

1/4 cup pure maple syrup


Method:

Place all the ingredients in a blender. Roll into 12 equally sized balls and roll the balls in desiccated coconut. Place in the refrigerator for up to a week.
