An easy dish to whip up for the children in no time!
Ingredients (Serves 4):
1 packet of tenderstem broccoli
1 packet of asparagus
2 leeks
4 mini sweet peppers
2 courgettes
1 tbsp garlic oil
6-8 handfuls of pasta
15g each of gruyere, Parmesan and cheddar cheese
4tsp Sundried tomato pesto
Method:
Steam the tenderstem broccoli and asparagus together in a pan, lightly roast the peppers, leeks and courgettes in the garlic oil in another pan, whilst the pasta is boiling, once all cooked put all the ingredients into the same pan and coat it all in homemade sun-dried tomato paste, pop it in an oven dish and sprinkled a good layer of grated gruyere, parmesan and cheddar cheese and then baked in the oven to get a crispy topping for 15-20 minutes.
