You can never go wrong with beetroot. These energy bites turned out perfectly, very tasty and nutritionally beneficial.


You can never go wrong with beetroot. These energy bites turned out perfectly, very tasty and nutritionally beneficial. Everyone at the clinic enjoyed them - might have to send some more in next week.


Ingredients: - 1/2 cup finely shredded coconut - 1/2 cup sprouted, dehydrated buckwheat - 1 medium beetroot (peeled, chopped) - 1 cup dates ( soaked ) - seeds of 1/2 vanilla bean


Method:

Just throw all the ingredients into a blender and there you have it, your beetroot energy bites ready to be rolled into balls.
